ABOUT THE DISH Butter Chicken, known as murgh makhani in Hindi, is believed to have originated in the 1950s in Delhi, India, at the famed Moti Mahal restaurant. The story goes that the chef had some leftover tandoori chicken and decided to add butter, tomato puree, cream, and a blend of spices to it, ultimately yielding what has become one of the most popular dishes at Indian restaurants.
