ABOUT THE DISH Vindaloo is believed to have originated in the 16th century, when the Portuguese arrived in Goa on India’s western coast. They brought with them a dish called Carne de Vinha d'alhos, which consisted of meat marinated in wine vinegar and garlic. Goans adapted the recipe by adding local ingredients and spices, creating a flavorful dish with both Indian and Portuguese influences.
